Tomatoes Stuffed With Rice And Other Goodies

Not like most of the rice stuffed tomatoes recipes, this dish is very juicy and rich. The other goodies inside the tomatoes involve nuts, bell peppers, raisins, mint, onions and… WINE!


6 Large tomatoes
For the stuffing:
  • 1/2 Onion, finely minced
  • 2 Garlic cloves, sliced
  • 1/2 Green Bell pepper, finely minced
  • 1 tbs. Raisins
  • 1/2 glass Red wine
  • 1/2 cup Walnuts, chopped
  • 1 cup Risotto (or Basmatti rice)
  • Handful Mint leaves, finely minced
  • Salt
  • Black pepper

For the Sauce

  • 1/2 Onion, finely minced
  • 1/2 Green Bell pepper, finely minced
  • 2 Garlic cloves, sliced
  • The inside of the tomatoes we used for stuffing, minced
  • 1 can Crushed tomatoes
  • Salt
  • Black Pepper
  • Red Paprika

 How to make

1. Use a knife and a spoon in order to take out the insides of the tomatoes.
SAM_24902. Stuffing: In a medium pan, cook the onion, green bell pepper, raisins and garlic with the wine on medium heat. Cook for about 15 minutes.
SAM_24933. In the meanwhile, in a bowl mix rice with mint and walnuts. When everything in the pan is ready, add it to the bowl and mix.
SAM_24944. Sauce: In a pan fry the onion with garlic. Add bell pepper and the insides of the tomatoes and cook on medium heat until everything becomes soft. Add crushed tomatoes and spices and mix. Let the sauce cook on low heat for a few minutes. 
5. Stuffing. Using your hands/spoon, put the stuffing inside the tomatoes. important: the rice is going to double its size so you better fill only 2/3 of each tomato. 
SAM_24956. Gently lay stuffed tomatoes on the pan. The sauce should almost cover the tomatoes so if you need a few more inches just add some water. Don’t forget to put some of the sauce inside the tomato to help cook the rice.
7. cover pan and cook on low heat for about 50 minutes. Serve with lots of sauce!
