Delicious Baby Plum Tomatoes Salad
I just love tomatoes, I think it’s the perfect fruit. I like it fresh, cooked, boiled and preserved. When it comes to easy to make salads, this next recipe it a big WIN. Every time I make it, I get lots of compliments even though it is super easy to make and only have about 5 ingredients.
This recipe will work with every kind of tomatoes, but my favourite kind of tomatoes is defiantly the the Baby Plum ones, so I recommend to try to use them.
What you’ll need (Serves 2 – as a side dish)
- 30 Baby Plum Tomatoes
- 1 Medium Red Onion
- Handfull of Parsley
- Juice of one Lemon
- 4 Tablespoons of Olive Oil
- Salt & Pepper
How to Make:
- Cut the Tomatoes lengthwise
- Chop the Onion and Parsley – Mix the ingredients together
- Squeeze the lemon
- Add the olive oil and season with salt and pepper to your liking
*It’s best to let the salad rest a bit in the fridge so all of the flavours will blend together
